I don’t care what anyone says, kids love anything deep fried…and perhaps, so do I (that’s why I need to workout a lot).
I became addicted to southern hush puppies years ago when I used to go to Myrtle Beach, SC, on vacation with my buddies. I could never, ever eat just one. I acquired this recipe some time ago. You can replace the onion with jalapenos if you want a more spicy flavour. My kids love these…hope you do too.
- 2 eggs , beaten
- ½ cup – white sugar
- 1 medium onion – fine diced
- 1 cup – flour
- 1 cup – cornmeal
- 3 cups – oil for frying (I use canola)
- In a medium bowl, mix together eggs, sugar, and onion. Blend in flour and cornmeal.
- Heat 2 inches of oil to 365 degrees F (185 degrees C). Drop batter by rounded teaspoonfuls in hot oil, and fry until golden brown. Cook in small batches to maintain oil temperature. Drain briefly on paper towels. Serve hot.
