This is one of my fave recipes of all time.  When I was married, I didn’t cook much.  Now, I have a plathora of spices and I love trying new recipes.  This one I grabbed from  This recipe is also one of my my children’s personal favorites.

A side note…I use medium yellow curry, which is pretty mild.  Feel free to use something more spicy, if you desire.  Also, don’t cheap out on the coconut milk.  Use a really good quality.  And, I find the low fat one doesn’t taste as good or blend as well.  I also toast Naan bread in a frying pan with a wee bit of olive oil. The Naan bread from Costco is great.  And yes, that is an actual pic of the finished product from last Sunday’s dinner.  Enjoy!
